Bhubaneswar: The aroma of freshly made Chitau Pitha (country cake) wafted through the air as women participants prepared the delectable delicacy at the ‘Chitau Utsav’ organised by Sambhabana, an Oriya cultural magazine, at Jayadev Bhawan, here on Saturday.
This fried pancake made from rice flour, coconut, jaggery and milk is often offered in pujas to Lord Jagannath. Though the traditional procedures lend a unique taste to the delectable delicacy, the medium of cooking and technique of preparation has undergone several changes. For instance, in most homes chitau is no longer made using the earthen pots called palama.
The Utsav aimed at reviving the elements of Odia culture that is gradually fading away.
