Panasakatha Tarkari

Ingredients

  • 1 medium sized Raw Jackfruit (Panasakatha)
  • 2-3 medium sized potatoes
  • 2 Onions (sliced)
  • 12-15 flakes of garlic
  • A small piece of ginger
  • 2 tomatoes (chopped)
  • 1 tsp turmeric powder
  • 1 tsp chilli powder
  • 1 tsp cumin seeds
  • 1 tsp curry powder
  • Salt to taste
  • 4-5 tbsp refined oil

Cooking Method

  • Peel the skin of the Jackfruit and Potatoes and cut it into small pieces.
  • Leave them to par boil in a container.
  • Grind Onion, Ginger and Garlic and Cumin seeds, to make a fine paste.
  • In a pan add 2 tsp Oil, When oil is hot, add the par boiled vegetables for 2-3 mins and keep it aside.
  • In another pan add 2 tsp Oil, When oil is hot, add the paste, Turmeric powder, Chilli powder and allow it to cook, till the paste starts leaving oil.
  • Then add Tomatoes to the pan and mix it.
  • After the Tomatoes get cooked, add the vegetables, Salt and mix it.
  • Then add 2 cups of water, stir it and cover the pan with a lid .
  • Once the vegetables are cooked add Curry powder and remove the pan from the flame.
